Wine of the Month For November

Paso Robles, California is producing some excellent value wines for under $25. This month’s selection is a Cabernet Sauvignon. It’s lower in alcohol (14%) and it has the familiar Cab flavor profile of black currants and cherry. The tannins are there but not in your face. BTW, a client used the term ‘Dry’ to describe their wine preference recently which I took to mean ‘not sweet’. The guest however meant they wanted a wine which dries out the month which is what tannins do. The wine industry does make things difficult sometimes (see my Blog post this week).
